This Chinese dried ginger has a lemony taste and is less pungent than other varieties. It's harvested 9 to 10 months after planting when fully mature and more pungent and fibrous. The skin is scraped off first before peeling and drying. Combines well with cardamom, cinnamon, and cloves.
