Hand-forged kitchen knives from Murray Carter who first trained in Japan with Sensei Yasuyuki Sakemoto, a 16th generation Yoshimoto bladesmith whose family custom-forged samurai swords for some of Japan’s most influential feudal lords. Carter worked for an additional 12 years as a village bladesmith before founding Carter Cutlery out of Oregon.
Made with an Arizona desert ironwood handle and includes a canvas bolster. All knives are made with kataha (two layer) construction or sanmai (three layer) construction of pure Hitachi white and blue steel.
