Use one inch of 100-degree Fahrenheit water to rapidly 'wash' the leaves for a few seconds to open the leaves, discarding this first brew. Subsequent infusions are best made with high temperature water and quick 20-30 second infusions. The softened leaf will require lower temperatures as you continue to steep one cup at a time, so no need to re-heat the water. Optimal infusion for subsequent brews is 90 degrees Fahrenheit.
